Ingredients

  • Ground beef (80% lean) - 400 grams
  • Fresh rosemary - 2 tablespoons, finely chopped
  • Garlic powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Parmesan cheese - 50 grams, grated
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Zucchini - 1 medium, sliced into rounds
  • Cherry tomatoes - 200 grams, halved
  • Balsamic vinegar - 1 tablespoon

Steps

  1. In a mixing bowl, combine the ground beef, chopped rosemary, garlic powder, salt, black pepper, grated Parmesan, and egg. Mix until well combined.
  2. Form the mixture into two equal-sized patties, about 2 cm thick.
  3. Heat the olive oil in a skillet over medium-high heat. Once hot, add the patties and cook for about 5-6 minutes on each side for medium doneness, or until cooked to your liking.
  4. While the burgers cook, add the zucchini rounds to the skillet and sauté for about 3-4 minutes, until they are tender and slightly caramelized. Set aside.
  5. In the same skillet, add the cherry tomatoes and balsamic vinegar, cooking for an additional 2-3 minutes until the tomatoes are softened.
  6. To serve, place each burger on a plate, top with sautéed zucchini and balsamic tomatoes.
