- Ground beef - 400 grams (80% lean)
- Fresh basil - 10 grams, chopped
- Garlic - 2 cloves, minced
- Cherry tomatoes - 200 grams, halved
- Zucchini - 2 medium, spiralized
- Olive oil - 2 tablespoons
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Oregano - 1 teaspoon, dried
Steps
- In a mixing bowl, combine the ground beef, chopped basil, minced garlic, salt, and black pepper. Mix until well combined and form two patties.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the beef patties for about 5-7 minutes on each side, or until they reach your desired doneness.
- In another pan, heat the remaining tablespoon of olive oil over medium heat. Add the halved cherry tomatoes and sprinkle with oregano, salt, and pepper. Sauté for about 5-7 minutes until the tomatoes soften and release their juices.
- While the tomatoes are cooking, spiralize the zucchini into noodles. You can lightly sauté them in the same skillet for about 2-3 minutes if you prefer them warm, or serve raw for a crunchier texture.
- To assemble, place a portion of the zucchini noodles on each plate, top with a beef patty, and spoon the tomato sauce over the top. Finish with a sprinkle of grated Parmesan cheese and additional fresh basil if desired.
