  • Nutritional yeast - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Whole grain burger buns - 2
  • Sliced tomato - 1 (for serving)
  • Lettuce leaves - 2 (for serving)

Steps

  1. Grate the zucchini and place it in a clean kitchen towel; squeeze out excess moisture.
  2. In a mixing bowl, combine the grated zucchini, mashed chickpeas, breadcrumbs, minced garlic, chopped parsley, nutritional yeast, olive oil, salt, black pepper, and lemon juice. Mix until well combined.
  3. Shape the mixture into two burger patties.
