- Lemon juice - 1 tablespoon
- Whole grain burger buns - 2
- Sliced tomato - 1 (for serving)
- Lettuce leaves - 2 (for serving)
Steps
- Grate the zucchini and place it in a clean kitchen towel; squeeze out excess moisture.
- In a mixing bowl, combine the grated zucchini, mashed chickpeas, breadcrumbs, minced garlic, chopped parsley, nutritional yeast, olive oil, salt, black pepper, and lemon juice. Mix until well combined.
- Shape the mixture into two burger patties.
