Ingredients

  • Veal ground meat - 400 grams
  • Parmesan cheese (grated) - 50 grams
  • Egg - 1 large
  • Garlic (minced) - 2 cloves
  • Fresh parsley (chopped) - 2 tablespoons
  • Fresh basil (chopped) - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Zucchini (sliced into rounds) - 200 grams
  • Cherry tomatoes (halved) - 150 grams

Steps

  1. In a large bowl, combine the ground veal, grated Parmesan, egg, minced garlic, chopped parsley, chopped basil, salt, and black pepper. Mix until well combined.
  2. Divide the mixture into two equal portions and shape each into a patty.
  3. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the veal patties for about 5-7 minutes on each side, or until they reach an internal temperature of 70°C (160°F).
  4. While the patties are cooking, heat the remaining tablespoon of olive oil in another skillet over medium heat. Add the sliced zucchini and cook for about 3-4 minutes until tender.
  5. Add the halved cherry tomatoes to the skillet with the zucchini and cook for an additional 2 minutes until warmed through.
  6. Serve the veal patties hot, topped with the sautéed zucchini and cherry tomatoes.
