- Veal ground meat - 400 grams
- Parmesan cheese (grated) - 50 grams
- Egg - 1 large
- Garlic (minced) - 2 cloves
- Fresh parsley (chopped) - 2 tablespoons
- Fresh basil (chopped) - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Zucchini (sliced into rounds) - 200 grams
- Cherry tomatoes (halved) - 150 grams
Steps
- In a large bowl, combine the ground veal, grated Parmesan, egg, minced garlic, chopped parsley, chopped basil, salt, and black pepper. Mix until well combined.
- Divide the mixture into two equal portions and shape each into a patty.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the veal patties for about 5-7 minutes on each side, or until they reach an internal temperature of 70°C (160°F).
- While the patties are cooking, heat the remaining tablespoon of olive oil in another skillet over medium heat. Add the sliced zucchini and cook for about 3-4 minutes until tender.
- Add the halved cherry tomatoes to the skillet with the zucchini and cook for an additional 2 minutes until warmed through.
- Serve the veal patties hot, topped with the sautéed zucchini and cherry tomatoes.
