Ingredients

  • Fresh spinach - 200 grams
  • Canned chickpeas - 240 grams (drained and rinsed)
  • Rolled oats - 50 grams
  • Garlic - 2 cloves (minced)
  • Onion - 1 small (finely chopped)
  • Nutritional yeast - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Dried oregano - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Whole wheat burger buns - 2
  • Tomato - 1 (sliced)
  • Avocado - 1 (sliced)
  • Fresh basil leaves - a handful

Steps

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent, about 3-4 minutes.
  2. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  3. In a mixing bowl, combine the drained chickpeas, rolled oats, cooked spinach mixture, nutritional yeast, salt, black pepper, oregano, and lemon juice.
  4. Mash the mixture with a fork or potato masher until well combined but still chunky. Form the mixture into two burger patties.
  5. In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  6. To assemble the burgers, place each patty on a whole wheat bun and top with sliced tomato, avocado, and fresh basil leaves. Serve immediately.
