- Fresh spinach - 200 grams
- Canned chickpeas - 240 grams (drained and rinsed)
- Rolled oats - 50 grams
- Garlic - 2 cloves (minced)
- Onion - 1 small (finely chopped)
- Nutritional yeast - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Dried oregano - 1 teaspoon
- Lemon juice - 1 tablespoon
- Whole wheat burger buns - 2
- Tomato - 1 (sliced)
- Avocado - 1 (sliced)
- Fresh basil leaves - a handful
Steps
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent, about 3-4 minutes.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine the drained chickpeas, rolled oats, cooked spinach mixture, nutritional yeast, salt, black pepper, oregano, and lemon juice.
- Mash the mixture with a fork or potato masher until well combined but still chunky. Form the mixture into two burger patties.
- In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
- To assemble the burgers, place each patty on a whole wheat bun and top with sliced tomato, avocado, and fresh basil leaves. Serve immediately.
