- Cooked Arborio rice - 200 grams
- Chickpeas (cooked or canned) - 100 grams
- Fresh parsley (chopped) - 30 grams
- Garlic (minced) - 2 cloves
- Nutritional yeast - 2 tablespoons
- Ground flaxseed - 1 tablespoon
- Water - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Whole wheat burger buns - 2
- Lettuce leaves - 4
- Tomato (sliced) - 1 medium
- Avocado (sliced) - 1 small
Steps
- In a bowl, mash the cooked chickpeas with a fork until mostly smooth.
- Add the cooked Arborio rice, chopped parsley, minced garlic, nutritional yeast, ground flaxseed mixed with water, salt, black pepper, and paprika to the bowl. Mix everything until well combined.
- Form the mixture into two burger patties.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and crispy.
- While the patties are cooking, toast the whole wheat burger buns in the same skillet or a toaster until lightly browned.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the rice burger patty, sliced tomato, and avocado. Top with the other half of the bun.
- Serve immediately with your favorite dipping sauce or side salad.
