Ingredients

  • Cooked Arborio rice - 200 grams
  • Chickpeas (cooked or canned) - 100 grams
  • Fresh parsley (chopped) - 30 grams
  • Garlic (minced) - 2 cloves
  • Nutritional yeast - 2 tablespoons
  • Ground flaxseed - 1 tablespoon
  • Water - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Whole wheat burger buns - 2
  • Lettuce leaves - 4
  • Tomato (sliced) - 1 medium
  • Avocado (sliced) - 1 small

Steps

  1. In a bowl, mash the cooked chickpeas with a fork until mostly smooth.
  2. Add the cooked Arborio rice, chopped parsley, minced garlic, nutritional yeast, ground flaxseed mixed with water, salt, black pepper, and paprika to the bowl. Mix everything until well combined.
  3. Form the mixture into two burger patties.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and crispy.
  5. While the patties are cooking, toast the whole wheat burger buns in the same skillet or a toaster until lightly browned.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the rice burger patty, sliced tomato, and avocado. Top with the other half of the bun.
  7. Serve immediately with your favorite dipping sauce or side salad.
