Ingredients

  • Ricotta cheese - 250 grams
  • Fresh spinach - 150 grams
  • Garlic - 1 clove, minced
  • Parmesan cheese - 30 grams, grated
  • Egg - 1 large
  • Breadcrumbs - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon (for cooking)
  • Whole-grain burger buns - 2
  • Tomato - 1, sliced
  • Red onion - 1/4, sliced
  • Fresh basil - a few leaves

Steps

  1. Wash the fresh spinach and sauté it in a pan with a teaspoon of olive oil and minced garlic over medium heat for about 3-4 minutes until wilted. Remove from heat and let cool.
  2. In a mixing bowl, combine the ricotta cheese, sautéed spinach, grated Parmesan cheese, egg, breadcrumbs, salt, and black pepper. Mix until well combined.
  3. Form the mixture into two patties, ensuring they are compact enough to hold together during cooking.
  4. Heat the remaining olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and firm.
  5. While the patties are cooking, lightly toast the whole-grain burger buns.
  6. Assemble the burgers by placing each patty on a toasted bun and topping with sliced tomato, red onion, and fresh basil leaves. Serve immediately.
