  • Sun-dried tomatoes - 100 grams, chopped
  • Rolled oats - 50 grams
  • Garlic - 2 cloves, minced
  • Fresh basil - 10 grams, chopped
  • Olive oil - 1 tablespoon
  • Nutritional yeast - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Burger buns - 2, whole grain or gluten-free
  • Lettuce - 2 leaves
  • Tomato - 1, sliced
  • Avocado - 1, sliced

Steps

  1. In a food processor, combine the chickpeas, sun-dried tomatoes, rolled oats, minced garlic, fresh basil, olive oil, nutritional yeast, salt, black pepper, and paprika. Pulse until the mixture is well combined but still slightly chunky.
  2. Form the mixture into two patties, about 1.5 cm thick.
  3. Heat a non-stick skillet over medium heat and add a splash of olive oil. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  4. While the patties are cooking, prepare the burger buns by toasting them lightly.
  5. Assemble the burgers by placing a patty on each bun, adding lettuce, tomato slices, and avocado. Top with the other half of the bun.
