- Rolled oats - 50 grams
- Garlic - 2 cloves, minced
- Fresh basil - 10 grams, chopped
- Olive oil - 1 tablespoon
- Nutritional yeast - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Burger buns - 2, whole grain or gluten-free
- Lettuce - 2 leaves
- Tomato - 1, sliced
- Avocado - 1, sliced
Steps
- In a food processor, combine the chickpeas, sun-dried tomatoes, rolled oats, minced garlic, fresh basil, olive oil, nutritional yeast, salt, black pepper, and paprika. Pulse until the mixture is well combined but still slightly chunky.
- Form the mixture into two patties, about 1.5 cm thick.
- Heat a non-stick skillet over medium heat and add a splash of olive oil. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, prepare the burger buns by toasting them lightly.
- Assemble the burgers by placing a patty on each bun, adding lettuce, tomato slices, and avocado. Top with the other half of the bun.
