Steps
- Preheat the grill or a non-stick skillet over medium heat.
- In a bowl, mix the chicken breast with salt, black pepper, and 2 tablespoons of pesto until well coated.
- Form the chicken mixture into two equal patties.
- Cook the patties on the grill or skillet for about 5-6 minutes on each side or until the internal temperature reaches 75°C.
- While the patties are cooking, lightly toast the burger buns on the grill or in a toaster.
- In the last minute of cooking, place a slice of mozzarella on each patty and cover to allow the cheese to melt.
- Assemble the burgers by spreading the remaining pesto on the bottom half of the buns.
- Add the cooked chicken patty with melted mozzarella, top with sliced tomatoes, and a handful of arugula.
- Finish with the top half of the bun and serve immediately.
