  • Pesto sauce - 4 tablespoons
  • Whole wheat burger buns - 2
  • Fresh mozzarella cheese - 100 grams, sliced
  • Tomato - 1 medium, sliced
  • Arugula - 50 grams
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the grill or a non-stick skillet over medium heat.
  2. In a bowl, mix the chicken breast with salt, black pepper, and 2 tablespoons of pesto until well coated.
  3. Form the chicken mixture into two equal patties.
  4. Cook the patties on the grill or skillet for about 5-6 minutes on each side or until the internal temperature reaches 75°C.
  5. While the patties are cooking, lightly toast the burger buns on the grill or in a toaster.
  6. In the last minute of cooking, place a slice of mozzarella on each patty and cover to allow the cheese to melt.
  7. Assemble the burgers by spreading the remaining pesto on the bottom half of the buns.
  8. Add the cooked chicken patty with melted mozzarella, top with sliced tomatoes, and a handful of arugula.
  9. Finish with the top half of the bun and serve immediately.
