Ingredients

  • Polenta - 150 grams
  • Water - 600 ml
  • Grated Parmesan cheese - 30 grams
  • Egg - 1 large
  • All-purpose flour - 30 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Dried oregano - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh basil leaves - 4 leaves
  • Tomato - 1 medium, sliced
  • Lettuce leaves - 2
  • Pesto sauce - 2 tablespoons

Steps

  1. In a pot, bring 600 ml of water to a boil and add 1 teaspoon of salt.
  2. Slowly whisk in 150 grams of polenta, stirring continuously to prevent lumps.
  3. Reduce the heat to low and cook for about 15 minutes, stirring frequently until thick and creamy.
  4. Remove from heat and stir in 30 grams of grated Parmesan cheese, 1 egg, 30 grams of flour, 1/2 teaspoon of black pepper, and 1/2 teaspoon of dried oregano until well combined.
  5. Spread the polenta mixture onto a greased baking sheet, about 1.5 cm thick, and let it cool for at least 15 minutes until set.
  6. Once cooled, cut the polenta into 2 burger-sized patties.
  7. Heat 2 tablespoons of olive oil in a skillet over medium heat and fry the patties for about 3-4 minutes on each side until golden brown and crispy.
  8. To assemble, place a lettuce leaf on the bottom half of each burger bun, add the polenta patty, top with tomato slices, fresh basil leaves, and a tablespoon of pesto sauce.
  9. Top with the other half of the bun and serve immediately.
