Ingredients
- Polenta - 150 grams
- Water - 600 ml
- Grated Parmesan cheese - 30 grams
- Egg - 1 large
- All-purpose flour - 30 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Dried oregano - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Fresh basil leaves - 4 leaves
- Tomato - 1 medium, sliced
- Lettuce leaves - 2
- Pesto sauce - 2 tablespoons
Steps
- In a pot, bring 600 ml of water to a boil and add 1 teaspoon of salt.
- Slowly whisk in 150 grams of polenta, stirring continuously to prevent lumps.
- Reduce the heat to low and cook for about 15 minutes, stirring frequently until thick and creamy.
- Remove from heat and stir in 30 grams of grated Parmesan cheese, 1 egg, 30 grams of flour, 1/2 teaspoon of black pepper, and 1/2 teaspoon of dried oregano until well combined.
- Spread the polenta mixture onto a greased baking sheet, about 1.5 cm thick, and let it cool for at least 15 minutes until set.
- Once cooled, cut the polenta into 2 burger-sized patties.
- Heat 2 tablespoons of olive oil in a skillet over medium heat and fry the patties for about 3-4 minutes on each side until golden brown and crispy.
- To assemble, place a lettuce leaf on the bottom half of each burger bun, add the polenta patty, top with tomato slices, fresh basil leaves, and a tablespoon of pesto sauce.
- Top with the other half of the bun and serve immediately.
