  • 50g almond flour
  • 2 cloves garlic - minced
  • 1 tablespoon fresh parsley - chopped
  • 1 tablespoon lemon juice
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - for grilling
  • 150g arugula - for serving
  • Lemon wedges - for garnish

Steps

  1. In a bowl, combine the chopped fish fillets, grated zucchini, beaten egg, almond flour, minced garlic, parsley, lemon juice, salt, and pepper until well mixed.
  2. Shape the mixture into two burger patties and place them on a plate.
  3. Heat a grill or skillet over medium heat and add a drizzle of olive oil.
  4. Cook the patties for about 4-5 minutes on each side, or until golden brown and cooked through.
  5. Remove the patties from the grill and let them rest for a minute.
  6. Serve the fish burgers on a bed of arugula and garnish with lemon wedges.
