Burger di Peperoni

Ingredients

  • Red bell pepper - 1 medium
  • Yellow bell pepper - 1 medium
  • Chickpeas - 200 grams (cooked)
  • Garlic - 1 clove, minced
  • Fresh basil - 10 grams, chopped
  • Oregano - 1 teaspoon, dried
  • Bread crumbs - 50 grams
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat burger buns - 2
  • Romaine lettuce - 2 leaves
  • Tomato - 1 medium, sliced
  • Vegan mayonnaise - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the red and yellow bell peppers in half, remove seeds, and place them cut-side down on a baking sheet.
  3. Roast the peppers in the oven for 20 minutes, or until the skins are blistered and slightly charred.
  4. While the peppers are roasting, mash the cooked chickpeas in a bowl until mostly smooth but still chunky.
  5. Add the minced garlic, chopped basil, dried oregano, bread crumbs, olive oil, salt, and black pepper to the mashed chickpeas. Mix well until combined.
  6. Once the peppers are done, remove them from the oven and let them cool slightly. Peel off the skins and chop the flesh into small pieces.
  7. Fold the chopped roasted peppers into the chickpea mixture until well incorporated.
  8. Form the mixture into two burger patties.
  9. Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for 5-6 minutes on each side, until golden brown.
  10. To assemble the burgers, spread vegan mayonnaise on each bun, add a lettuce leaf, place the chickpea patty on top, and add sliced tomatoes. Top with the other half of the bun.
