Ingredients
- Red bell pepper - 1 medium
- Yellow bell pepper - 1 medium
- Chickpeas - 200 grams (cooked)
- Garlic - 1 clove, minced
- Fresh basil - 10 grams, chopped
- Oregano - 1 teaspoon, dried
- Bread crumbs - 50 grams
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole wheat burger buns - 2
- Romaine lettuce - 2 leaves
- Tomato - 1 medium, sliced
- Vegan mayonnaise - 2 tablespoons
Steps
- Preheat the oven to 200°C (400°F).
- Cut the red and yellow bell peppers in half, remove seeds, and place them cut-side down on a baking sheet.
- Roast the peppers in the oven for 20 minutes, or until the skins are blistered and slightly charred.
- While the peppers are roasting, mash the cooked chickpeas in a bowl until mostly smooth but still chunky.
- Add the minced garlic, chopped basil, dried oregano, bread crumbs, olive oil, salt, and black pepper to the mashed chickpeas. Mix well until combined.
- Once the peppers are done, remove them from the oven and let them cool slightly. Peel off the skins and chop the flesh into small pieces.
- Fold the chopped roasted peppers into the chickpea mixture until well incorporated.
- Form the mixture into two burger patties.
- Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for 5-6 minutes on each side, until golden brown.
- To assemble the burgers, spread vegan mayonnaise on each bun, add a lettuce leaf, place the chickpea patty on top, and add sliced tomatoes. Top with the other half of the bun.
