- Potatoes - 500 grams
- Chickpea flour - 50 grams
- Nutritional yeast - 2 tablespoons
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh basil - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Breadcrumbs - 100 grams
- Lettuce leaves - 4
- Tomato - 1, sliced
- Avocado - 1, sliced
- Vegan mayonnaise - 2 tablespoons
Steps
- Peel and chop the potatoes into small cubes, then boil them in salted water for about 15-20 minutes until tender.
- Drain the potatoes and mash them in a bowl until smooth.
- Add chickpea flour, nutritional yeast, olive oil, minced garlic, chopped parsley, chopped basil, salt, and black pepper to the mashed potatoes, and mix until well combined.
- Form the mixture into 4 patties (2 per serving) and coat each one with breadcrumbs.
- Heat a non-stick skillet over medium heat and add a splash of olive oil.
- Cook the patties for about 5 minutes on each side until golden brown and crispy.
- Assemble the burgers by placing a patty on each plate, topped with lettuce, tomato slices, avocado, and a dollop of vegan mayonnaise.
