Ingredients

  • Potatoes - 500 grams
  • Chickpea flour - 50 grams
  • Nutritional yeast - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh basil - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Breadcrumbs - 100 grams
  • Lettuce leaves - 4
  • Tomato - 1, sliced
  • Avocado - 1, sliced
  • Vegan mayonnaise - 2 tablespoons

Steps

  1. Peel and chop the potatoes into small cubes, then boil them in salted water for about 15-20 minutes until tender.
  2. Drain the potatoes and mash them in a bowl until smooth.
  3. Add chickpea flour, nutritional yeast, olive oil, minced garlic, chopped parsley, chopped basil, salt, and black pepper to the mashed potatoes, and mix until well combined.
  4. Form the mixture into 4 patties (2 per serving) and coat each one with breadcrumbs.
  5. Heat a non-stick skillet over medium heat and add a splash of olive oil.
  6. Cook the patties for about 5 minutes on each side until golden brown and crispy.
  7. Assemble the burgers by placing a patty on each plate, topped with lettuce, tomato slices, avocado, and a dollop of vegan mayonnaise.
