- Walnuts - 100 grams
- Cooked green lentils - 150 grams
- Breadcrumbs - 50 grams
- Garlic - 1 clove, minced
- Onion - 1 small, finely chopped
- Olive oil - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Ground cumin - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Whole grain burger buns - 2
- Tomato - 1, sliced
- Lettuce - a few leaves
- Vegan pesto - 2 tablespoons
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 5 minutes.
- In a mixing bowl, combine the sautéed onion and garlic with walnuts, cooked lentils, breadcrumbs, chopped parsley, salt, pepper, cumin, and lemon juice. Mix until well combined.
- Using your hands, form the mixture into two burger patties.
- Place the patties on a baking sheet lined with parchment paper and bake in the preheated oven for 15 minutes, flipping halfway through.
- While the patties are baking, prepare your burger buns and toppings: slice the tomato and wash the lettuce.
- Once the patties are done, assemble the burgers by placing each patty on a bun and topping with vegan pesto, tomato slices, and lettuce.
- Serve immediately and enjoy your delicious Burger di Noci!
