Ingredients

  • Walnuts - 100 grams
  • Cooked green lentils - 150 grams
  • Breadcrumbs - 50 grams
  • Garlic - 1 clove, minced
  • Onion - 1 small, finely chopped
  • Olive oil - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Ground cumin - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Whole grain burger buns - 2
  • Tomato - 1, sliced
  • Lettuce - a few leaves
  • Vegan pesto - 2 tablespoons

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 5 minutes.
  3. In a mixing bowl, combine the sautéed onion and garlic with walnuts, cooked lentils, breadcrumbs, chopped parsley, salt, pepper, cumin, and lemon juice. Mix until well combined.
  4. Using your hands, form the mixture into two burger patties.
  5. Place the patties on a baking sheet lined with parchment paper and bake in the preheated oven for 15 minutes, flipping halfway through.
  6. While the patties are baking, prepare your burger buns and toppings: slice the tomato and wash the lettuce.
  7. Once the patties are done, assemble the burgers by placing each patty on a bun and topping with vegan pesto, tomato slices, and lettuce.
  8. Serve immediately and enjoy your delicious Burger di Noci!
