- cooked lentils - 150 grams
- zucchini - 100 grams, grated
- carrot - 50 grams, grated
- onion - 1 small, finely chopped
- garlic - 1 clove, minced
- fresh parsley - 2 tablespoons, chopped
- egg - 1 large
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- olive oil - 2 tablespoons
- whole grain burger buns - 2
- lettuce leaves - 2
- tomato - 1 large, sliced
- avocado - 1 small, sliced
- balsamic vinegar - 1 tablespoon
Steps
- In a mixing bowl, combine the buckwheat flour, cooked lentils, grated zucchini, grated carrot, chopped onion, minced garlic, chopped parsley, egg, salt, and black pepper. Mix well until all ingredients are fully incorporated.
- Form the mixture into two burger patties, ensuring they are compact and hold together.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, add the burger patties and cook for about 5-6 minutes on each side until golden brown and crispy.
- While the patties are cooking, prepare the burger buns by toasting them lightly in the remaining olive oil on another skillet or in a toaster.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patties, sliced tomato, and avocado. Drizzle with balsamic vinegar before placing the top half of the bun.
- Serve immediately with a side salad or your favorite dipping sauce.
