- Portobello mushrooms - 2 large
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Oats - 50 grams, ground
- Chickpea flour - 30 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Dried oregano - 1/2 teaspoon
- Cherry tomatoes - 150 grams, halved
- Basil leaves - 10, for garnish
- Whole grain burger buns - 2
- Vegan mayonnaise - 2 tablespoons
Steps
- Preheat the oven to 200°C (400°F).
- In a food processor, combine the portobello mushrooms, garlic, parsley, salt, pepper, and oregano. Pulse until finely chopped.
- In a mixing bowl, combine the mushroom mixture with ground oats and chickpea flour. Mix until well combined and form into two burger patties.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 5 minutes on each side, until golden brown.
- While the patties are cooking, toss the cherry tomatoes with the remaining olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for 10 minutes.
- To assemble the burgers, spread vegan mayonnaise on the whole grain buns, place the mushroom patties on top, add roasted cherry tomatoes, and garnish with fresh basil leaves.
