  • Egg - 1 large
  • Breadcrumbs - 75 grams
  • Fresh basil - 10 grams, chopped
  • Garlic - 1 clove, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Burger buns - 2 pieces
  • Lettuce - 2 leaves
  • Tomato - 1, sliced

Steps

  1. Carefully rinse the zucchini flowers under cold water and pat dry; remove the stems and any excess pollen.
  2. In a mixing bowl, combine the ricotta cheese, grated Parmesan, egg, breadcrumbs, chopped basil, minced garlic, salt, and black pepper. Mix until well combined.
  3. Gently fold in the zucchini flowers into the ricotta mixture, being careful not to break them.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  5. Scoop about a quarter of the mixture into the skillet, shaping it into a patty. Repeat with the remaining mixture to form two patties.
  6. Cook each patty for about 4-5 minutes on each side until golden brown and crispy. Add more oil if necessary.
  7. While the patties are cooking, warm the burger buns in another skillet or toaster.
  8. Assemble the burgers by placing a lettuce leaf and a slice of tomato on the bottom half of each bun, followed by the zucchini flower patty, and then the top half of the bun.
