  • Breadcrumbs - 50 grams
  • Fresh parsley - 2 tablespoons (chopped)
  • Garlic - 1 clove (minced)
  • Red onion - 1/4 (finely chopped)
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon
  • Burger buns - 2 (whole wheat preferred)
  • Tomato - 1 (sliced)
  • Lettuce leaves - 2
  • Vegan mayonnaise - 2 tablespoons

Steps

  1. In a mixing bowl, mash the cooked fava beans with a fork until mostly smooth but with some texture.
  2. Add the breadcrumbs, chopped parsley, minced garlic, chopped red onion, 1 tablespoon of olive oil, lemon juice, salt, black pepper, and paprika to the mashed fava beans. Mix well until combined.
  3. Shape the mixture into two equal-sized patties, ensuring they hold together well.
  4. Heat a non-stick skillet over medium heat and add the remaining tablespoon of olive oil.
  5. Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
  6. While the patties are cooking, toast the burger buns in a separate pan or toaster.
  7. Assemble the burgers by placing a fava bean patty on each bun, topped with lettuce, tomato slices, and a dollop of vegan mayonnaise.
  8. Serve immediately with a side of fresh salad or your choice of sides.
