- Paprika - 1/2 teaspoon
- Burger buns - 2 (whole wheat preferred)
- Tomato - 1 (sliced)
- Lettuce leaves - 2
- Vegan mayonnaise - 2 tablespoons
Steps
- In a mixing bowl, mash the cooked fava beans with a fork until mostly smooth but with some texture.
- Add the breadcrumbs, chopped parsley, minced garlic, chopped red onion, 1 tablespoon of olive oil, lemon juice, salt, black pepper, and paprika to the mashed fava beans. Mix well until combined.
- Shape the mixture into two equal-sized patties, ensuring they hold together well.
- Heat a non-stick skillet over medium heat and add the remaining tablespoon of olive oil.
- Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
- While the patties are cooking, toast the burger buns in a separate pan or toaster.
- Assemble the burgers by placing a fava bean patty on each bun, topped with lettuce, tomato slices, and a dollop of vegan mayonnaise.
- Serve immediately with a side of fresh salad or your choice of sides.
