Ingredients

  • Canned cannellini beans - 400 grams, drained and rinsed
  • Cooked quinoa - 100 grams
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons, divided
  • Breadcrumbs - 50 grams
  • Nutritional yeast - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1, sliced
  • Avocado - 1, sliced

Steps

  1. In a large bowl, mash the drained cannellini beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add the cooked quinoa, chopped red onion, minced garlic, parsley, 1 tablespoon of olive oil, breadcrumbs, nutritional yeast, salt, black pepper, and paprika to the bowl. Mix until well combined.
  3. Form the mixture into two equal patties, about 1.5 cm thick.
  4. Heat the remaining tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side until golden brown.
  5. While the patties are cooking, toast the burger buns lightly in another skillet or oven.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, sliced tomato, and avocado. Top with the other half of the bun.
  7. Serve warm and enjoy your Burger di Fagioli!
