- Canned cannellini beans - 400 grams, drained and rinsed
- Cooked quinoa - 100 grams
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons, divided
- Breadcrumbs - 50 grams
- Nutritional yeast - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Burger buns - 2
- Lettuce - 2 leaves
- Tomato - 1, sliced
- Avocado - 1, sliced
Steps
- In a large bowl, mash the drained cannellini beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the cooked quinoa, chopped red onion, minced garlic, parsley, 1 tablespoon of olive oil, breadcrumbs, nutritional yeast, salt, black pepper, and paprika to the bowl. Mix until well combined.
- Form the mixture into two equal patties, about 1.5 cm thick.
- Heat the remaining tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side until golden brown.
- While the patties are cooking, toast the burger buns lightly in another skillet or oven.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, sliced tomato, and avocado. Top with the other half of the bun.
