  • Wild boar ground meat - 300 grams
  • Almond flour - 30 grams
  • Parmesan cheese, grated - 30 grams
  • Egg - 1 large
  • Garlic, minced - 1 clove
  • Fresh rosemary, chopped - 1 teaspoon
  • Fresh thyme, chopped - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Arugula - 50 grams
  • Cherry tomatoes, halved - 100 grams
  • Balsamic vinegar - 1 tablespoon

Steps

  1. In a large bowl, combine the wild boar meat, almond flour, Parmesan cheese, egg, minced garlic, rosemary, thyme, salt, and black pepper. Mix until well combined.
  2. Shape the mixture into two burger patties, pressing firmly to hold them together.
  3. Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side or until they reach an internal temperature of 70°C.
  4. While the burgers are cooking, prepare the salad by tossing arugula and cherry tomatoes in a bowl with balsamic vinegar, adding a pinch of salt and pepper to taste.
  5. Once the burgers are cooked, remove them from the skillet and let them rest for a few minutes before serving.
  6. Serve the burgers on plates alongside the arugula salad.
