Ingredients
- Cauliflower - 300 grams
- Chickpeas (canned) - 200 grams, drained and rinsed
- Rolled oats - 50 grams
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Nutritional yeast - 2 tablespoons
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Avocado - 1/2, sliced
Steps
- Preheat your oven to 200°C (400°F).
- Cut the cauliflower into small florets and place them on a baking sheet. Drizzle with 1/2 tablespoon of olive oil and sprinkle with salt and pepper. Roast for 15-20 minutes until tender and slightly caramelized.
- In a food processor, combine the roasted cauliflower, chickpeas, rolled oats, minced garlic, parsley, nutritional yeast, paprika, cumin, lemon juice, and the remaining 1/2 tablespoon of olive oil. Pulse until the mixture is well combined but still has some texture.
- Shape the mixture into two equal burger patties.
- In a non-stick skillet, heat a little olive oil over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown.
- While the patties are cooking, prepare your burger buns by toasting them lightly if desired.
- Assemble the burgers by placing a lettuce leaf on each bun, followed by the cauliflower patty, tomato slices, and avocado. Top with the other half of the bun.
- Serve immediately and enjoy your delicious Burger di Cavolfiore!
