Ingredients

  • Cauliflower - 300 grams
  • Chickpeas (canned) - 200 grams, drained and rinsed
  • Rolled oats - 50 grams
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Nutritional yeast - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Avocado - 1/2, sliced

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the cauliflower into small florets and place them on a baking sheet. Drizzle with 1/2 tablespoon of olive oil and sprinkle with salt and pepper. Roast for 15-20 minutes until tender and slightly caramelized.
  3. In a food processor, combine the roasted cauliflower, chickpeas, rolled oats, minced garlic, parsley, nutritional yeast, paprika, cumin, lemon juice, and the remaining 1/2 tablespoon of olive oil. Pulse until the mixture is well combined but still has some texture.
  4. Shape the mixture into two equal burger patties.
  5. In a non-stick skillet, heat a little olive oil over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown.
  6. While the patties are cooking, prepare your burger buns by toasting them lightly if desired.
  7. Assemble the burgers by placing a lettuce leaf on each bun, followed by the cauliflower patty, tomato slices, and avocado. Top with the other half of the bun.
  8. Serve immediately and enjoy your delicious Burger di Cavolfiore!
