Ingredients
- cooked chestnuts - 200 grams
- button mushrooms - 100 grams, finely chopped
- red onion - 1 small, finely chopped
- garlic - 2 cloves, minced
- fresh parsley - 2 tablespoons, chopped
- rolled oats - 50 grams
- ground flaxseed - 1 tablespoon
- water - 3 tablespoons
- olive oil - 2 tablespoons
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- smoked paprika - 1/2 teaspoon
- whole grain burger buns - 2
- arugula - 1 cup, for serving
- vegan mayonnaise - 2 tablespoons, for serving
Steps
- In a small bowl, mix the ground flaxseed with 3 tablespoons of water and let it sit for about 5 minutes to thicken.
- Heat 1 tablespoon of olive oil in a frying pan over medium heat. Add the chopped red onion and garlic, sautéing until translucent, about 3-4 minutes.
- Add the finely chopped mushrooms to the pan and cook until they release their moisture and are tender, about 5 minutes.
- In a mixing bowl, combine the cooked chestnuts, sautéed onion and mushroom mixture, rolled oats, flaxseed mixture, parsley, salt, black pepper, and smoked paprika. Mash everything together until well combined but still slightly chunky.
- Form the mixture into two patties, about 1.5 cm thick.
- Heat the remaining olive oil in the frying pan over medium heat. Cook the patties for 5-6 minutes on each side until golden brown and heated through.
- Toast the whole grain burger buns lightly on the pan or in a toaster.
- Assemble the burgers by placing a patty on each bun, topping with arugula and a tablespoon of vegan mayonnaise. Serve immediately.
