  • Red onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Oats - 30 grams, ground
  • Olive oil - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Flour (all-purpose or chickpea) - 2 tablespoons, for binding
  • Lettuce leaves - for serving
  • Tomato slices - for serving
  • Whole grain buns - 2

Steps

  1. In a large bowl, combine the grated carrots, cooked chickpeas, cooked quinoa, minced garlic, chopped red onion, and fresh parsley.
  2. Add the ground oats, ground cumin, salt, and black pepper to the mixture and stir until well combined.
  3. Mash the chickpeas slightly with a fork to help bind the ingredients together, then add the flour to the mixture and mix until a thick, moldable consistency is achieved.
  4. Form the mixture into two patties, approximately 1.5 cm thick.
  5. Heat the olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side, or until golden brown and heated through.
  6. To serve, place each patty on a whole grain bun, topped with lettuce and tomato slices.
