- Broccoli - 300 grams
- Chickpeas - 200 grams, cooked
- Oats - 50 grams, rolled
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Nutritional yeast - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
Steps
- Steam the broccoli for about 5-7 minutes until tender, then chop finely.
- In a large mixing bowl, mash the cooked chickpeas with a fork until mostly smooth but still chunky.
- Add the steamed broccoli, rolled oats, minced garlic, chopped onion, parsley, nutritional yeast, olive oil, salt, black pepper, paprika, and lemon juice to the bowl. Mix everything until well combined.
- Using your hands, form the mixture into two patties.
- Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for about 5-6 minutes on each side or until golden brown.
- Toast the burger buns lightly in the skillet.
- Assemble the burgers by placing a patty on each bun, topped with lettuce and slices of tomato. Serve immediately.
