Ingredients

  • Beetroot - 200 grams, roasted and finely chopped
  • Chickpeas - 100 grams, cooked and mashed
  • Breadcrumbs - 50 grams
  • Parmesan cheese - 30 grams, grated
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Burger buns - 2 units
  • Goat cheese - 50 grams, crumbled
  • Arugula - a handful for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wrap the beetroot in aluminum foil and roast in the oven for 30-35 minutes until tender. Allow to cool, then peel and finely chop.
  3. In a mixing bowl, combine the roasted beetroot, mashed chickpeas, breadcrumbs, grated Parmesan, minced garlic, chopped parsley, egg, salt, and black pepper. Mix until well combined.
  4. Shape the mixture into two burger patties.
  5. In a non-stick skillet, heat the olive oil over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and heated through.
  6. Toast the burger buns lightly in the same skillet or in the oven.
  7. Assemble the burgers by placing the beetroot patties on the bottom half of the buns, topping with crumbled goat cheese and arugula, then place the top half of the buns on.
  8. Serve immediately and enjoy your Burger di Barbabietola!
