Ingredients

  • Asparagus - 200 grams, trimmed and chopped
  • Ground chicken or turkey - 300 grams
  • Parmesan cheese - 30 grams, grated
  • Garlic - 2 cloves, minced
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Dried oregano - 1/2 teaspoon
  • Lettuce leaves - 4 large, for wrapping
  • Cherry tomatoes - 100 grams, halved (for garnish)
  • Balsamic vinegar - 1 tablespoon (for drizzling)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a pot of boiling water, blanch the chopped asparagus for 2-3 minutes until bright green and tender. Drain and cool in ice water.
  3. In a mixing bowl, combine the ground chicken or turkey, blanched asparagus, grated Parmesan, minced garlic, egg, salt, black pepper, and oregano. Mix well until all ingredients are fully incorporated.
  4. Form the mixture into 2 equal patties.
  5. Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, until golden brown and cooked through (internal temperature should reach 75°C or 165°F).
  6. Remove the patties from the skillet and let them rest for a couple of minutes.
  7. To serve, place each patty on a lettuce leaf and top with cherry tomatoes. Drizzle with balsamic vinegar if desired.
