- Asparagus - 200 grams, trimmed and chopped
- Ground chicken or turkey - 300 grams
- Parmesan cheese - 30 grams, grated
- Garlic - 2 cloves, minced
- Egg - 1 large
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Dried oregano - 1/2 teaspoon
- Lettuce leaves - 4 large, for wrapping
- Cherry tomatoes - 100 grams, halved (for garnish)
- Balsamic vinegar - 1 tablespoon (for drizzling)
Steps
- Preheat your oven to 200°C (400°F).
- In a pot of boiling water, blanch the chopped asparagus for 2-3 minutes until bright green and tender. Drain and cool in ice water.
- In a mixing bowl, combine the ground chicken or turkey, blanched asparagus, grated Parmesan, minced garlic, egg, salt, black pepper, and oregano. Mix well until all ingredients are fully incorporated.
- Form the mixture into 2 equal patties.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, until golden brown and cooked through (internal temperature should reach 75°C or 165°F).
- Remove the patties from the skillet and let them rest for a couple of minutes.
- To serve, place each patty on a lettuce leaf and top with cherry tomatoes. Drizzle with balsamic vinegar if desired.
