Ingredients

  • Arborio rice - 50 grams
  • Almond milk - 400 ml
  • Coconut sugar - 30 grams
  • Vanilla extract - 1 teaspoon
  • Lemon zest - 1 teaspoon
  • Cornstarch - 1 tablespoon
  • Salt - a pinch
  • Cinnamon - a pinch
  • Fresh fruit (for topping) - as desired

Steps

  1. In a medium saucepan, combine the Arborio rice, almond milk, and a pinch of salt. Bring to a gentle boil over medium heat, stirring occasionally.
  2. Once it reaches a boil, reduce the heat to low and simmer for about 15 minutes, or until the rice is tender and has absorbed most of the milk.
  3. In a small bowl, mix the cornstarch with 2 tablespoons of almond milk until smooth. Stir in the coconut sugar, vanilla extract, lemon zest, and cinnamon.
  4. Add this mixture to the cooked rice, stirring well to combine. Continue cooking for an additional 5 minutes on low heat until the mixture thickens.
  5. Remove from heat and let it cool slightly. Pour the budino into serving dishes and refrigerate for at least 1 hour to set.
  6. Serve chilled, topped with fresh fruit of your choice.
