Ingredients

  • Milk - 250 ml
  • Heavy cream - 100 ml
  • Granulated sugar - 70 g
  • Egg yolks - 2
  • Vanilla extract - 1 tsp
  • Cornstarch - 1 tbsp
  • Unsalted butter - 10 g
  • Salt - a pinch

Steps

  1. In a medium saucepan, combine the milk and heavy cream. Heat over medium heat until warm, but do not boil.
  2. In a separate bowl, whisk together the granulated sugar, egg yolks, cornstarch, and a pinch of salt until smooth.
  3. Slowly add the warm milk and cream mixture to the egg yolk mixture, whisking continuously to temper the eggs.
  4. Pour the combined mixture back into the saucepan and cook over medium heat, stirring constantly until it thickens, about 5-7 minutes.
  5. Once thickened, remove from heat and stir in the vanilla extract and butter until fully incorporated.
  6. Pour the mixture into two ramekins and let them cool to room temperature before refrigerating for at least 2 hours.
  7. While the budino is chilling, prepare the caramel by melting 50 g of sugar in a small saucepan over medium heat until golden brown. Remove from heat and allow to cool slightly.
  8. Drizzle the cooled caramel over the chilled budino before serving.
