- Milk - 250 ml
- Heavy cream - 100 ml
- Granulated sugar - 70 g
- Egg yolks - 2
- Vanilla extract - 1 tsp
- Cornstarch - 1 tbsp
- Unsalted butter - 10 g
- Salt - a pinch
Steps
- In a medium saucepan, combine the milk and heavy cream. Heat over medium heat until warm, but do not boil.
- In a separate bowl, whisk together the granulated sugar, egg yolks, cornstarch, and a pinch of salt until smooth.
- Slowly add the warm milk and cream mixture to the egg yolk mixture, whisking continuously to temper the eggs.
- Pour the combined mixture back into the saucepan and cook over medium heat, stirring constantly until it thickens, about 5-7 minutes.
- Once thickened, remove from heat and stir in the vanilla extract and butter until fully incorporated.
- Pour the mixture into two ramekins and let them cool to room temperature before refrigerating for at least 2 hours.
- While the budino is chilling, prepare the caramel by melting 50 g of sugar in a small saucepan over medium heat until golden brown. Remove from heat and allow to cool slightly.
- Drizzle the cooled caramel over the chilled budino before serving.
