  • Canned crushed tomatoes - 400 grams
  • Vegan bacon or tempeh - 100 grams, diced
  • Nutritional yeast - 2 tablespoons
  • Salt - to taste

Steps

  1. Cook the bucatini according to package instructions in a large pot of salted boiling water until al dente, usually about 8-10 minutes. Reserve 1/2 cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for about 5 minutes until translucent.
  3. Add minced garlic, smoked paprika, and crushed red pepper flakes. Cook for another minute until fragrant.
  4. Stir in the diced vegan bacon or tempeh and cook for 5-7 minutes until it starts to brown slightly.
  5. Pour in the canned crushed tomatoes and mix well. Let the sauce simmer for about 10 minutes, stirring occasionally. Season with salt and black pepper to taste.
  6. Once the sauce has thickened, add the cooked bucatini to the skillet along with reserved pasta water. Toss everything together until the pasta is well coated.
