- San Marzano tomatoes - 200 grams, crushed
- Pecorino Romano cheese - 30 grams, grated
- Extra virgin olive oil - 1 tablespoon
- Garlic - 1 clove, minced
- Red chili flakes - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil - for garnish
Steps
- Bring a large pot of salted water to a boil and cook the bucatini pasta according to package instructions until al dente, about 9-11 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the diced guanciale and cook until crispy, about 5-7 minutes.
- Add the minced garlic and red chili flakes to the skillet and cook for an additional 1-2 minutes until fragrant.
- Stir in the crushed San Marzano tomatoes and let the sauce simmer for about 10 minutes. Season with salt and black pepper to taste.
- Once the pasta is cooked, reserve a cup of pasta water and drain the rest. Add the bucatini to the skillet with the sauce and toss to combine, adding reserved pasta water as needed to achieve desired sauce consistency.
- Remove from heat and stir in the grated Pecorino Romano cheese until melted and well combined.
- Serve warm, garnished with fresh basil and additional cheese if desired.
