Ingredients

  • All-purpose flour - 250 grams
  • Active dry yeast - 7 grams
  • Granulated sugar - 50 grams
  • Salt - 5 grams
  • Milk (warm) - 100 ml
  • Unsalted butter (softened) - 75 grams
  • Eggs - 2 large
  • Pistachio paste - 50 grams
  • Pistachios (chopped, for garnish) - 30 grams

Steps

  1. In a small bowl, combine warm milk and active dry yeast. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine flour, sugar, and salt. Make a well in the center and add the eggs, softened butter, yeast mixture, and pistachio paste.
  3. Mix the ingredients until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. Preheat the oven to 180°C (350°F). Punch down the risen dough and divide it into two equal parts.
  6. Shape each part into a ball and place on a baking tray lined with parchment paper. Cover and let them rise for another 30 minutes.
  7. Once risen, brush the tops with a beaten egg for a golden finish and sprinkle chopped pistachios on top.
  8. Bake in the preheated oven for 20-25 minutes or until golden brown. Allow to cool slightly before serving.
