Ingredients
- Bresaola - 100 grams
- Mixed salad greens (arugula, spinach, and lettuce) - 100 grams
- Cherry tomatoes - 100 grams
- Avocado - 1 medium
- Parmesan cheese (or Halal alternative) - 30 grams
- Extra virgin olive oil - 2 tablespoons
- Balsamic vinegar - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Wash and dry the mixed salad greens thoroughly, then place them in a large serving bowl.
- Halve the cherry tomatoes and add them to the bowl with the greens.
- Cut the avocado in half, remove the pit, and scoop out the flesh. Slice it into thin pieces and add to the salad.
- Thinly slice the bresaola and arrange it over the salad.
- Using a vegetable peeler, shave the parmesan cheese over the top of the salad.
- In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, salt, and black pepper to create the dressing.
- Drizzle the dressing over the salad just before serving and toss gently to combine.
