Ingredients

  • Bresaola - 100 grams
  • Mixed salad greens (arugula, spinach, and lettuce) - 100 grams
  • Cherry tomatoes - 100 grams
  • Avocado - 1 medium
  • Parmesan cheese (or Halal alternative) - 30 grams
  • Extra virgin olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Wash and dry the mixed salad greens thoroughly, then place them in a large serving bowl.
  2. Halve the cherry tomatoes and add them to the bowl with the greens.
  3. Cut the avocado in half, remove the pit, and scoop out the flesh. Slice it into thin pieces and add to the salad.
  4. Thinly slice the bresaola and arrange it over the salad.
  5. Using a vegetable peeler, shave the parmesan cheese over the top of the salad.
  6. In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, salt, and black pepper to create the dressing.
  7. Drizzle the dressing over the salad just before serving and toss gently to combine.
