- Branzino - 2 whole (about 300g each)
- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Lemon - 1, sliced
- Fresh parsley - 2 tablespoons, chopped
- Fresh thyme - 1 tablespoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cherry tomatoes - 150g, halved
- Capers - 1 tablespoon, rinsed
Steps
- Preheat the oven to 200°C (400°F).
- Clean the branzino by removing the scales and guts if not already done; rinse under cold water.
- In a bowl, mix olive oil, minced garlic, salt, black pepper, chopped parsley, and chopped thyme.
- Rub the herb mixture all over the branzino, including inside the cavity.
- Place lemon slices inside the cavity of each fish and arrange them in a baking dish.
- Scatter the halved cherry tomatoes and capers around the fish in the baking dish.
- Drizzle any remaining olive oil over the tomatoes and season with a pinch of salt and pepper.
- Bake in the preheated oven for 25-30 minutes, or until the fish is cooked through and flakes easily with a fork.
- Remove from the oven and let rest for 5 minutes before serving.
