Ingredients

  • Branzino - 2 whole (about 300g each)
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Lemon - 1, sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 150g, halved
  • Capers - 1 tablespoon, rinsed

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Clean the branzino by removing the scales and guts if not already done; rinse under cold water.
  3. In a bowl, mix olive oil, minced garlic, salt, black pepper, chopped parsley, and chopped thyme.
  4. Rub the herb mixture all over the branzino, including inside the cavity.
  5. Place lemon slices inside the cavity of each fish and arrange them in a baking dish.
  6. Scatter the halved cherry tomatoes and capers around the fish in the baking dish.
  7. Drizzle any remaining olive oil over the tomatoes and season with a pinch of salt and pepper.
  8. Bake in the preheated oven for 25-30 minutes, or until the fish is cooked through and flakes easily with a fork.
  9. Remove from the oven and let rest for 5 minutes before serving.
