- almond flour - 100 grams
- whey protein powder - 30 grams
- baking powder - 1 teaspoon
- vanilla extract - 1 teaspoon
- eggs - 1 large
- honey - 2 tablespoons
- chopped almonds - 30 grams
- dark chocolate chips - 20 grams
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, whey protein powder, and baking powder.
- In another bowl, whisk together the egg, honey, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
- Fold in the chopped almonds and dark chocolate chips until evenly distributed.
- Transfer the dough onto the prepared baking sheet and shape it into a log about 25 cm long and 5 cm wide.
- Bake in the preheated oven for 20 minutes or until lightly golden.
- Remove from the oven and let it cool for 10 minutes, then slice the log diagonally into 1 cm thick pieces.
- Place the sliced biscotti back on the baking sheet, cut side up, and bake for an additional 10-12 minutes until crisp.
- Allow to cool completely before serving.
