Ingredients

  • almond flour - 100 grams
  • whey protein powder - 30 grams
  • baking powder - 1 teaspoon
  • vanilla extract - 1 teaspoon
  • eggs - 1 large
  • honey - 2 tablespoons
  • chopped almonds - 30 grams
  • dark chocolate chips - 20 grams

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, whey protein powder, and baking powder.
  3. In another bowl, whisk together the egg, honey, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
  5. Fold in the chopped almonds and dark chocolate chips until evenly distributed.
  6. Transfer the dough onto the prepared baking sheet and shape it into a log about 25 cm long and 5 cm wide.
  7. Bake in the preheated oven for 20 minutes or until lightly golden.
  8. Remove from the oven and let it cool for 10 minutes, then slice the log diagonally into 1 cm thick pieces.
  9. Place the sliced biscotti back on the baking sheet, cut side up, and bake for an additional 10-12 minutes until crisp.
  10. Allow to cool completely before serving.
