Ingredients

  • Almond flour - 120 grams
  • Erythritol - 30 grams
  • Almonds, chopped - 30 grams
  • Egg - 1 large
  • Butter, melted - 30 grams
  • Baking powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the almond flour, erythritol, baking powder, and salt.
  3. In another bowl, whisk together the egg, melted butter, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms. Fold in the chopped almonds.
  5. Shape the dough into a log about 2.5 cm (1 inch) thick and place it on the prepared baking sheet.
  6. Bake in the preheated oven for 25 minutes until golden brown.
  7. Remove from the oven and let it cool for 10 minutes. Once cooled, slice the log into 1.5 cm (0.6 inch) thick pieces.
  8. Return the sliced biscotti to the baking sheet and bake for an additional 10-15 minutes, until crispy.
  9. Allow to cool completely before serving.
