- Almond flour - 120 grams
- Erythritol - 30 grams
- Almonds, chopped - 30 grams
- Egg - 1 large
- Butter, melted - 30 grams
- Baking powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Salt - a pinch
Steps
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the almond flour, erythritol, baking powder, and salt.
- In another bowl, whisk together the egg, melted butter, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms. Fold in the chopped almonds.
- Shape the dough into a log about 2.5 cm (1 inch) thick and place it on the prepared baking sheet.
- Bake in the preheated oven for 25 minutes until golden brown.
- Remove from the oven and let it cool for 10 minutes. Once cooled, slice the log into 1.5 cm (0.6 inch) thick pieces.
- Return the sliced biscotti to the baking sheet and bake for an additional 10-15 minutes, until crispy.
