- Almond flour - 100 grams
- All-purpose flour - 50 grams
- Baking powder - 1 teaspoon
- Coconut sugar - 70 grams
- Almond milk - 50 ml
- Vanilla extract - 1 teaspoon
- Chopped almonds - 50 grams
- Pinch of salt
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a large bowl, combine the almond flour, all-purpose flour, baking powder, coconut sugar, and a pinch of salt.
- In a separate bowl, whisk together the almond milk and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Fold in the chopped almonds until evenly distributed.
- Shape the dough into two logs, about 5 cm wide and 1.5 cm high, and place them on the prepared baking sheet.
- Bake in the preheated oven for 25 minutes, or until lightly golden.
- Remove from the oven and let cool for about 10 minutes, then slice the logs diagonally into 1 cm thick pieces.
- Place the sliced biscotti back on the baking sheet cut side up and bake for an additional 10 minutes.
- Allow to cool completely before serving.
