Ingredients

  • dried figs - 100 grams
  • all-purpose flour - 150 grams
  • almond flour - 50 grams
  • baking powder - 1 teaspoon
  • cinnamon - 1/2 teaspoon
  • maple syrup - 3 tablespoons
  • unsweetened almond milk - 50 ml
  • vanilla extract - 1 teaspoon
  • chopped almonds - 30 grams

Steps

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a small bowl, chop the dried figs into small pieces and soak them in warm water for about 10 minutes to soften. Drain and set aside.
  3. In a large mixing bowl, combine the all-purpose flour, almond flour, baking powder, and cinnamon. Mix well.
  4. In another bowl, whisk together the maple syrup, almond milk, and vanilla extract until smooth.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chopped figs and chopped almonds until evenly distributed.
  6. Turn the dough out onto a lightly floured surface and shape it into a log about 5 cm wide and 20 cm long.
  7. Transfer the log to the prepared baking sheet and flatten it slightly.
  8. Bake in the preheated oven for 20 minutes, or until lightly golden.
  9. Remove from the oven and allow to cool for about 10 minutes before slicing the log into 1 cm thick pieces.
  10. Arrange the slices cut side up on the baking sheet and return to the oven for an additional 10 minutes, until they are crisp.
  11. Allow to cool completely before serving.
