- dried figs - 100 grams
- all-purpose flour - 150 grams
- almond flour - 50 grams
- baking powder - 1 teaspoon
- cinnamon - 1/2 teaspoon
- maple syrup - 3 tablespoons
- unsweetened almond milk - 50 ml
- vanilla extract - 1 teaspoon
- chopped almonds - 30 grams
Steps
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a small bowl, chop the dried figs into small pieces and soak them in warm water for about 10 minutes to soften. Drain and set aside.
- In a large mixing bowl, combine the all-purpose flour, almond flour, baking powder, and cinnamon. Mix well.
- In another bowl, whisk together the maple syrup, almond milk, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chopped figs and chopped almonds until evenly distributed.
- Turn the dough out onto a lightly floured surface and shape it into a log about 5 cm wide and 20 cm long.
- Transfer the log to the prepared baking sheet and flatten it slightly.
- Bake in the preheated oven for 20 minutes, or until lightly golden.
- Remove from the oven and allow to cool for about 10 minutes before slicing the log into 1 cm thick pieces.
- Arrange the slices cut side up on the baking sheet and return to the oven for an additional 10 minutes, until they are crisp.
- Allow to cool completely before serving.
