Steps

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the rice flour, almond flour, baking powder, and salt, mixing well.
  3. In another bowl, whisk together the egg, sugar, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms.
  5. Fold in the chopped almonds until evenly distributed.
  6. Shape the dough into a log, about 25 cm long and 5 cm wide, and place it on the prepared baking sheet.
  7. Bake in the preheated oven for 25 minutes, or until lightly golden.
  8. Remove from the oven and let it cool for 10 minutes, then slice the log into 1 cm thick pieces.
  9. Lay the slices flat on the baking sheet and bake for an additional 10 minutes, turning them halfway through for even crispiness.
  10. Once they are golden and crisp, remove from the oven and let cool completely before serving.
