Steps
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the rice flour, almond flour, baking powder, and salt, mixing well.
- In another bowl, whisk together the egg, sugar, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms.
- Fold in the chopped almonds until evenly distributed.
- Shape the dough into a log, about 25 cm long and 5 cm wide, and place it on the prepared baking sheet.
- Bake in the preheated oven for 25 minutes, or until lightly golden.
- Remove from the oven and let it cool for 10 minutes, then slice the log into 1 cm thick pieces.
- Lay the slices flat on the baking sheet and bake for an additional 10 minutes, turning them halfway through for even crispiness.
- Once they are golden and crisp, remove from the oven and let cool completely before serving.
