- Granulated sugar - 50 grams
- Almond milk - 60 milliliters
- Vegetable oil - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Chopped walnuts - 30 grams
- Dark chocolate chips (vegan) - 30 grams
Steps
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a bowl, combine the all-purpose flour, cocoa powder, baking powder, and granulated sugar. Mix well.
- In a separate bowl, whisk together the almond milk, vegetable oil, and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms. Fold in the chopped walnuts and dark chocolate chips.
- Transfer the dough to a floured surface and shape it into a log, approximately 25 cm long and 4 cm wide.
- Place the log on the prepared baking sheet and bake for 25 minutes, or until firm to the touch.
- Remove from the oven and let cool for 10 minutes. Once cooled, slice the log into 1 cm thick slices.
- Lay the slices cut-side down on the baking sheet and bake for an additional 10 minutes, flipping them halfway through for even crispness.
- Allow the biscotti to cool completely on a wire rack before serving.
