  • Cocoa powder - 30 grams
  • Baking powder - 1 teaspoon
  • Granulated sugar - 50 grams
  • Almond milk - 60 milliliters
  • Vegetable oil - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Chopped walnuts - 30 grams
  • Dark chocolate chips (vegan) - 30 grams

Steps

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a bowl, combine the all-purpose flour, cocoa powder, baking powder, and granulated sugar. Mix well.
  3. In a separate bowl, whisk together the almond milk, vegetable oil, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms. Fold in the chopped walnuts and dark chocolate chips.
  5. Transfer the dough to a floured surface and shape it into a log, approximately 25 cm long and 4 cm wide.
  6. Place the log on the prepared baking sheet and bake for 25 minutes, or until firm to the touch.
  7. Remove from the oven and let cool for 10 minutes. Once cooled, slice the log into 1 cm thick slices.
  8. Lay the slices cut-side down on the baking sheet and bake for an additional 10 minutes, flipping them halfway through for even crispness.
  9. Allow the biscotti to cool completely on a wire rack before serving.
