- Baking powder - 1 teaspoon
- Salt - 1/4 teaspoon
- Dry red wine - 100 milliliters
- Olive oil - 2 tablespoons
- Chopped almonds - 50 grams
- Vanilla extract - 1 teaspoon
Steps
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the all-purpose flour, almond flour, sugar, baking powder, and salt.
- In a separate bowl, mix together the dry red wine, olive oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the chopped almonds until evenly distributed in the dough.
- Transfer the dough to a lightly floured surface and shape it into a log about 25 cm long and 5 cm wide.
- Place the log onto the prepared baking sheet and flatten it slightly.
- Bake in the preheated oven for 25 minutes or until golden brown.
- Remove from the oven and let it cool for about 10 minutes before slicing it into 1 cm thick pieces.
- Arrange the slices cut side down on the baking sheet and bake for an additional 10 minutes, flipping them halfway through, until they are crisp.
- Let the biscotti cool completely on a wire rack before serving.
