  • Almond flour - 50 grams
  • Granulated sugar - 80 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Dry red wine - 100 milliliters
  • Olive oil - 2 tablespoons
  • Chopped almonds - 50 grams
  • Vanilla extract - 1 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the all-purpose flour, almond flour, sugar, baking powder, and salt.
  3. In a separate bowl, mix together the dry red wine, olive oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the chopped almonds until evenly distributed in the dough.
  6. Transfer the dough to a lightly floured surface and shape it into a log about 25 cm long and 5 cm wide.
  7. Place the log onto the prepared baking sheet and flatten it slightly.
  8. Bake in the preheated oven for 25 minutes or until golden brown.
  9. Remove from the oven and let it cool for about 10 minutes before slicing it into 1 cm thick pieces.
  10. Arrange the slices cut side down on the baking sheet and bake for an additional 10 minutes, flipping them halfway through, until they are crisp.
  11. Let the biscotti cool completely on a wire rack before serving.
