  • Erythritol - 30 grams
  • Baking powder - 1 teaspoon
  • Eggs - 2 large
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Dark chocolate chips (sugar-free) - 30 grams

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the almond flour, cocoa powder, erythritol, baking powder, and salt.
  3. In another bowl, whisk the eggs and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
  5. Fold in the dark chocolate chips evenly throughout the dough.
  6. Shape the dough into a log about 25 cm long and place it on the prepared baking sheet.
  7. Bake in the preheated oven for 20 minutes, or until firm to the touch.
  8. Remove from the oven and allow to cool for 10 minutes.
  9. Slice the log into 1 cm thick pieces and place them cut side down on the baking sheet.
  10. Return to the oven and bake for an additional 10 minutes to crisp up the biscotti.
  11. Let them cool completely on a wire rack before serving.
