- Dark chocolate chips (sugar-free) - 30 grams
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the almond flour, cocoa powder, erythritol, baking powder, and salt.
- In another bowl, whisk the eggs and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
- Fold in the dark chocolate chips evenly throughout the dough.
- Shape the dough into a log about 25 cm long and place it on the prepared baking sheet.
- Bake in the preheated oven for 20 minutes, or until firm to the touch.
- Remove from the oven and allow to cool for 10 minutes.
- Slice the log into 1 cm thick pieces and place them cut side down on the baking sheet.
- Return to the oven and bake for an additional 10 minutes to crisp up the biscotti.
- Let them cool completely on a wire rack before serving.
