Ingredients

  • Almond flour - 100 grams
  • Whole wheat flour - 50 grams
  • Baking powder - 1 teaspoon
  • Coconut oil - 2 tablespoons, melted
  • Honey - 2 tablespoons
  • Egg - 1 large
  • Vanilla extract - 1 teaspoon
  • Chopped almonds - 30 grams
  • Sea salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, whole wheat flour, baking powder, and sea salt.
  3. In another bowl, whisk together the melted coconut oil, honey, egg, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
  5. Fold in the chopped almonds until evenly distributed.
  6. Shape the dough into a log about 25 cm long and 5 cm wide on the prepared baking sheet.
  7. Bake for 20 minutes, or until lightly golden and firm to the touch.
  8. Remove from the oven and let cool for 10 minutes before slicing the log into 1 cm thick pieces.
  9. Place the sliced biscotti back on the baking sheet and bake for an additional 10-15 minutes until crisp, turning them halfway through.
  10. Allow to cool completely before serving.
