- Almond flour - 100 grams
- Whole wheat flour - 50 grams
- Baking powder - 1 teaspoon
- Coconut oil - 2 tablespoons, melted
- Honey - 2 tablespoons
- Egg - 1 large
- Vanilla extract - 1 teaspoon
- Chopped almonds - 30 grams
- Sea salt - a pinch
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, whole wheat flour, baking powder, and sea salt.
- In another bowl, whisk together the melted coconut oil, honey, egg, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
- Fold in the chopped almonds until evenly distributed.
- Shape the dough into a log about 25 cm long and 5 cm wide on the prepared baking sheet.
- Bake for 20 minutes, or until lightly golden and firm to the touch.
- Remove from the oven and let cool for 10 minutes before slicing the log into 1 cm thick pieces.
- Place the sliced biscotti back on the baking sheet and bake for an additional 10-15 minutes until crisp, turning them halfway through.
- Allow to cool completely before serving.
