- Unsalted butter - 50 g
- All-purpose flour - 70 g
- Large eggs - 2
- Granulated sugar - 30 g
- Vanilla extract - 1 tsp
- Milk - 250 ml
- Egg yolks - 2
- Cornstarch - 20 g
- Powdered sugar - for dusting
Steps
- Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.
- In a saucepan, combine water and butter over medium heat until the butter melts.
- Add flour to the saucepan, stirring vigorously until the mixture forms a ball and pulls away from the sides. Remove from heat and let cool for 5 minutes.
- Add the eggs one at a time, mixing well after each addition until smooth and glossy.
- Using a piping bag, pipe small mounds of the choux pastry onto the prepared baking sheet, leaving space between each.
- Bake for 20-25 minutes or until golden brown and puffed. Turn off the oven and leave the door ajar for 10 minutes to allow them to dry out.
- While the pastries cool, prepare the custard: In a saucepan, heat the milk until just boiling.
- In a bowl, whisk together egg yolks, granulated sugar, and cornstarch until smooth.
- Gradually add the hot milk to the egg mixture, whisking constantly to temper the eggs.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens. Remove from heat and stir in vanilla extract.
- Let the custard cool completely, then fill each cooled choux pastry with custard using a piping bag.
- Dust with powdered sugar before serving.
