Steps
- Preheat the oven to 200°C (400°F).
- Wrap the beets in aluminum foil and roast them in the oven for about 30-35 minutes or until tender.
- While the beets are roasting, toast the walnuts in a dry skillet over medium heat for about 5 minutes, stirring frequently until fragrant.
- Once the beets are done, remove them from the oven and let them cool slightly before peeling off the skins.
- Slice the roasted beets into thin rounds.
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and black pepper to make the dressing.
- In a large bowl, combine mixed salad greens and arugula. Drizzle with the dressing and toss gently.
