Ingredients
- Dark chocolate (70% cocoa) - 100 grams
- Milk - 150 ml
- Heavy cream - 150 ml
- Granulated sugar - 30 grams
- Gelatin powder - 2 grams
- Vanilla extract - 1 teaspoon
- Egg yolk - 1 large
Steps
- In a small bowl, sprinkle the gelatin powder over 2 tablespoons of cold water and let it bloom for about 5 minutes.
- In a saucepan, heat the milk and 15 grams of sugar over medium heat until it's warm but not boiling.
- Remove the saucepan from heat and add the bloomed gelatin, stirring until completely dissolved.
- Chop the dark chocolate and add it to the warm milk mixture, stirring until the chocolate is fully melted and smooth.
- In a separate bowl, whisk the egg yolk with the remaining sugar and vanilla extract until pale and creamy.
- Gradually mix in the chocolate mixture into the egg yolk mixture, stirring continuously to avoid cooking the yolk.
- In another bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the chocolate mixture in three additions, being careful not to deflate the cream.
- Pour the mixture into two serving glasses or molds and refrigerate for at least 4 hours, or until set.
- Serve chilled, optionally garnished with grated chocolate or fresh berries.
