  • Honey - 30 grams
  • Vanilla extract - 1 teaspoon
  • Cocoa powder - 1 tablespoon, for dusting
  • Dark chocolate (70% cocoa) - 20 grams, grated (for garnish)

Steps

  1. Soak the gelatin sheets in cold water for about 5 minutes until softened.
  2. In a small saucepan, gently heat the brewed espresso over low heat without boiling.
  3. Remove the espresso from heat, squeeze excess water from the gelatin sheets, and stir them into the warm espresso until fully dissolved.
  4. In a mixing bowl, combine Greek yogurt, honey, and vanilla extract; mix until smooth.
  5. Slowly pour the espresso mixture into the yogurt mixture, stirring gently until well combined.
  6. Divide the mixture evenly between two serving glasses and refrigerate for at least 2 hours, or until set.
