- Cherry tomatoes - 100 grams, diced
- Italian seasoning - 1 teaspoon

- Black pepper - 1/4 teaspoon
- Parmesan cheese - 30 grams, grated
- Mozzarella cheese - 50 grams, shredded
- Fresh basil - a handful, chopped (for garnish)
Steps
- Preheat the oven to 190°C (375°F).
- Cut the zucchinis in half lengthwise and scoop out the centers using a spoon to create 'boats'.
- In a skillet, heat the olive oil over medium heat and add the minced garlic. Sauté until fragrant, about 1 minute.
- Add the ground turkey to the skillet and cook until browned, about 5-7 minutes, breaking it apart with a spatula.
- Stir in the diced cherry tomatoes, Italian seasoning, salt, and black pepper. Cook for an additional 3-4 minutes until the tomatoes soften.
- Remove the skillet from heat and mix in half of the Parmesan cheese and half of the mozzarella cheese.
- Fill each zucchini boat with the turkey mixture, pressing it down gently to pack it in.
- Place the filled zucchini boats on a baking sheet and sprinkle the remaining mozzarella and Parmesan cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the zucchinis are tender and the cheese is melted and golden.
- Remove from the oven and garnish with fresh basil before serving.
