Ingredients

  • Chicken thighs - 4 pieces (about 600g)
  • Olive oil - 2 tablespoons (30ml)
  • Garlic - 3 cloves, minced
  • Dried oregano - 1 teaspoon
  • Dried basil - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Parmesan cheese - 30g, grated
  • Cherry tomatoes - 200g, halved
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, mix olive oil, minced garlic, oregano, basil, salt, and black pepper.
  3. Add the chicken thighs to the bowl and coat them well with the marinade.
  4. Place the marinated chicken thighs skin-side up on a baking tray.
  5. Sprinkle the grated Parmesan cheese over the chicken thighs.
  6. Arrange the halved cherry tomatoes around the chicken on the baking tray.
  7. Bake in the preheated oven for 35-40 minutes or until the chicken reaches an internal temperature of 75°C (165°F) and the skin is golden brown.
  8. Remove from the oven and let the chicken rest for 5 minutes.
  9. Garnish with chopped fresh parsley before serving.
