- Chicken thighs - 4 pieces (about 600g)
- Olive oil - 2 tablespoons (30ml)
- Garlic - 3 cloves, minced
- Dried oregano - 1 teaspoon
- Dried basil - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Parmesan cheese - 30g, grated
- Cherry tomatoes - 200g, halved
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- In a large bowl, mix olive oil, minced garlic, oregano, basil, salt, and black pepper.
- Add the chicken thighs to the bowl and coat them well with the marinade.
- Place the marinated chicken thighs skin-side up on a baking tray.
- Sprinkle the grated Parmesan cheese over the chicken thighs.
- Arrange the halved cherry tomatoes around the chicken on the baking tray.
- Bake in the preheated oven for 35-40 minutes or until the chicken reaches an internal temperature of 75°C (165°F) and the skin is golden brown.
- Remove from the oven and let the chicken rest for 5 minutes.
- Garnish with chopped fresh parsley before serving.
