Ingredients

  • 2 chicken thighs (bone-in, skin-on)
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper (red or green), sliced
  • 200 grams canned diced tomatoes
  • 1 tablespoon tomato paste
  • 100 grams black olives, pitted and sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sliced bell pepper to the skillet, cooking for an additional 3-4 minutes until softened.
  4. Push the vegetables to the side of the skillet and add the chicken thighs, skin-side down. Sear for about 5 minutes until the skin is golden brown.
  5. Flip the chicken thighs over, then stir in the diced tomatoes, tomato paste, olives, oregano, basil, salt, and pepper.
  6. Bring the mixture to a simmer, then transfer the skillet to the preheated oven.
  7. Bake uncovered for 30-35 minutes or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
  8. Remove from the oven and let it rest for a few minutes before serving. Garnish with fresh parsley.
