Ingredients

  • Artichokes - 2 whole
  • Olive oil - 4 tablespoons
  • Garlic - 2 cloves, minced
  • Parmesan cheese - 50 grams, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Bread crumbs (low carb) - 2 tablespoons (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Prepare the artichokes by trimming the tops and removing the tough outer leaves. Cut the artichokes in half lengthwise and scoop out the hairy choke with a spoon.
  3. In a bowl, mix together the olive oil, minced garlic, grated Parmesan cheese, chopped parsley, lemon juice, salt, and black pepper until well combined.
  4. Brush the artichoke halves with olive oil and fill the centers with the cheese mixture. If using, sprinkle low carb bread crumbs on top for added texture.
  5. Place the stuffed artichokes in a baking dish and add a splash of water to the bottom of the dish to create steam.
  6. Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the artichokes are tender and the tops are golden brown.
  7. Remove from the oven and let cool for a few minutes before serving.
