- Artichokes - 2 whole
- Olive oil - 4 tablespoons
- Garlic - 2 cloves, minced
- Parmesan cheese - 50 grams, grated
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Bread crumbs (low carb) - 2 tablespoons (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Prepare the artichokes by trimming the tops and removing the tough outer leaves. Cut the artichokes in half lengthwise and scoop out the hairy choke with a spoon.
- In a bowl, mix together the olive oil, minced garlic, grated Parmesan cheese, chopped parsley, lemon juice, salt, and black pepper until well combined.
- Brush the artichoke halves with olive oil and fill the centers with the cheese mixture. If using, sprinkle low carb bread crumbs on top for added texture.
- Place the stuffed artichokes in a baking dish and add a splash of water to the bottom of the dish to create steam.
- Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the artichokes are tender and the tops are golden brown.
- Remove from the oven and let cool for a few minutes before serving.
